A Great Mandarin Recipe From Our Student Health Group

Makes four servings. Each serving has 370 calories, 19 grams (g) fat, 10 g protein, 45 g carbohydrate, 5 g fiber and 130 milligrams sodium.
1 c. quinoa (white, red or tri-color)
1 lb. green beans
¾ c. mandarin oranges
¼ c. roasted almonds, chopped
Salt and pepper to taste
¼ c. feta
Parsley (optional garnish)
Maple Citrus Dressing Ingredients:
¼ c. olive oil
2 Tbsp. fresh lime juice
2 Tbsp. orange juice
2 Tbsp. maple syrup
Pinch of sea salt
Dash of black pepper
Rinse quinoa in a strainer and cook according to package directions. While quinoa is cooking, trim green beans, cutting each in half. Bring a pot of water to a boil. Add green beans and cook for 5 to 8 minutes, until they reach your desired tenderness. Drain immediately and submerge beans in an ice bath to stop the cooking process. While the beans cool, fluff quinoa and add salt and pepper to taste. Combine quinoa, beans, mandarin oranges and chopped almonds in a serving dish. Whisk together dressing and pour over salad. Allow salad to sit for 30 minutes to soak up dressing. Top with feta and parsley, if desired.
